Two Waldorf Astoria pastry chefs opened this patisserie in a Queens strip mall and still run both of its shops. It filed for Chapter 11 in 2016 and came out of the reorganization with the same two chefs in charge and no buyer involved.

Jean-Claude Perennou and Gnanasampanthan Sabaratnam have run Cannelle since 2007, and the Chapter 11 reorganization the company completed in 2017 left the business with them rather than a buyer. As a two-shop bakery it has little public labor or environmental record of any kind, and it names no suppliers and holds no certifications. The business answers to the two chefs who founded it.
