Interlude is a classical pianist's two Tribeca cafés, built one storefront at a time with his sister baking in-house. It pours George Howell beans and has taken no outside money.
The Big Picture
Interlude is a family operation: Josh Kim, a classical pianist, opened the first Tribeca café in 2018 after learning the trade at Joe Coffee, and Kim's sister Melody bakes everything in-house. The second café opened in April 2025, seven years later. Both were self-funded, and no outside investor has ever appeared in the record.
