Interlude is a family operation: classical pianist Josh Kim opened the first Tribeca café in 2018 after learning the trade at Joe Coffee, his sister Melody bakes everything in-house, and the second location took seven years to arrive — both self-funded. The beans come from George Howell, a named specialty roaster with a direct-trade reputation. Eight years in, the record is clean everywhere a record could exist.
