Chef Eyal Shani and his business partner Shahar Segal have owned Miznon outright since the first Tel Aviv shop opened in 2011, and no filing or press report names an outside investor. Growth abroad runs on local partners operating under the Miznon name rather than on outside capital, and that network has contracted: Vienna closed in January 2025 over rising rent, and the Melbourne flagship closed in August 2026. The group publishes no wage, sourcing or emissions figures of its own, so the two founders are effectively the only people it answers to.
